UMAMI UNITED JAPAN Co., Ltd. (Headquarters: Shibuya, Tokyo; Representative: Hiroto Yamasaki, hereinafter referred to as "our company") is pleased to announce that our plant-based product will be used in the launch of the "EGG-Free Dorayaki" by Shinshodoh, a traditional Japanese confectionery shop established in 1912 (Headquarters: Minato, Tokyo; Representative: Masahisa Watanabe).

"Wagashi," a traditional Japanese confectionery, is a proud part of Japan's food culture. It reflects the unique beauty of the changing seasons and is cherished not only in everyday meals but also in celebratory occasions, loved by people of all ages.
In recent years, both the food production landscape and consumer preferences have undergone significant changes. Consumer demands have become more specialized, with an increasing focus on allergy-friendly options and health-conscious choices. On the production side, challenges such as the uncertainty of egg supply and rising costs due to avian influenza, along with the growing demand for vegan products driven by increased inbound consumption, require producers to adapt to the evolving and diverse needs of consumers.

The "EGG-Free Dorayaki" developed by Shinshodoh was created based on feedback from customers with egg allergies who visit the shop. This initiative aligns with our mission of "CREATING THE FUTURE WITH ONE TABLE," aiming to build a society where people with various dietary needs, such as allergies, can come together to enjoy a meal without barriers. Through this effort, we hope to contribute to solving social issues starting from the choices available at the dining table. It also reflects the spirit of Shinshodoh, a 113-year-old traditional shop that, while deeply rooted in its heritage, is unafraid of change and constantly pursues new challenges and excellence in taste, striving to pass on the joy of enjoying sweets and preserving this cultural tradition.

Traditionally, dorayaki dough contains a large amount of eggs. However, for this "EGG-Free Dorayaki," we have completely omitted eggs and used two of our own ingredients to create the perfect texture and flavor. To achieve the moist and chewy texture of the dough, we used "UMAMI EGG." To replicate the richness and color of eggs without using any, we incorporated "UMAMI EGG FLAVOR."

Additionally, to create depth and umami without eggs, we added white miso to the dough. The combination of white miso brings out a rich, savory flavor, resulting in a deliciously balanced taste. To complement these ingredients, we used sweet white bean paste to create a refined, well-balanced dorayaki.

Enjoy the carefully handcrafted flavor that embodies both tradition and innovation, with each piece baked by hand at the store daily.
